Ingredients
- 2 eggs
- 200 g cottage cheese
- 1 tbsp ground psyllium husk
- 2 tsp stevia
- 1 tbsp vanilla
- butter for frying
Method
Mix eggs, cottage cheese, psyllium husk, stevia and vanilla together.
- Allow to stand for 5-10 minutes to allow the mixture to thicken.
- Heat approximately 50gms of butter or oil, in a non-stick pan on medium-low heat.
- Fry the pancakes for 3 or 4 minutes each side.
- Serve with cream and low carb berries.
Comments
- Keep the pancakes relatively small or they will be difficult to flip.
- When serving, try swapping the cream for ricotta.
