Ingredients

Method
  1. Mix eggs, cottage cheese, psyllium husk, stevia and vanilla together.

  2. Allow to stand for 5-10 minutes to allow the mixture to thicken.
  3. Heat approximately 50gms of butter or oil, in a non-stick pan on medium-low heat.
  4. Fry the pancakes for 3 or 4 minutes each side.
  5. Serve with cream and low carb berries.
Comments
  • Keep the pancakes relatively small or they will be difficult to flip.
  • When serving, try swapping the cream for ricotta.
